1 15oz Can Chickpeas
1 Large Avocado
1 Small Carrot (Diced)
Juice of 1 Lemon
1/2 TSP Garlic Powder
Pepper to Taste
In a bowl, roughly crush the chickpeas with the back of a fork or potato masher.
Add avocado, diced carrot, lemon juice, garlic powder & pepper to crushed chickpeas and combine.
Serve on corn tortillas, chickpea bread, or on top of a leafy green salad.
