For Simmering
1 LB Chicken Feet
1 TSP Kosher Salt
2 TBSP Soy Sauce
1 TBSP Sugar
3 Cloves of Garlic (Smashed)
1 Stick Cinnamon
For Frying
2 Large Eggs (Beaten)
1 Cup All Purpose Flour
1 TSP Salt
Clip the toenails from the chicken feet and wash feet, removing calluses and loose skin.
In a medium pan, place the chicken feet and add enough water to cover.
Add all the remaining simmering ingredients to the pan and bring the water to a hard boil, then reduce heat and simmer until chicken feet are tender about 1-2 hours.
Once tender, remove chicken feet from water and allow to cool.
Whisk eggs, flour and salt in a medium bowl.
Dip chicken feet into the batter, shaking off extra flour, dip again and once more shake off excess batter.
In batches, fry the chicken feet in a deep-fat fryer or a wok in oil at 375-400 degrees for 3-5 minutes, once cooked, serve immediately with a sprinkling of salt and/or soy sauce and chili powder.
