Deep South Jambalaya Recipe.


Ingredients:


1 TBSP Olive Oil
1 (12 oz) Package Andouille Sausage (Sliced)
1 Yellow Onion (Diced)
1 Red Bell Pepper (Seeded, Chopped)
1 Yellow Bell Pepper (seeded, Chopped)
3 Celery Ribs (Chopped);
4 Cloves of Garlic (Minced)
3 Cups Chicken Stock (Low Sodium)
1 (15 oz) Can Crushed Tomatoes
1 1/2 TSP Paprika
1 TSP Dried Oregano
1 TSP Dried Thyme
1/2 TSP Cayenne Pepper
Pinch of Salt
Pinch of Ground Black Pepper
1 1/2 Cups Long Grain White Rice
1 LB Shrimp (Peeled and Deveined)
2 Cups Cooked Chicken (Shredded)
1/3 Cup Scallions (Chopped)


Recipe Instructions:


In a large pot, over medium-high heat, preheat the olive oil and add the sausage slices to cook until browned on each side, roughly 5 minutes.
Transfer to a plate and set aside.
In the same pot, add the onion, bell pepper and celery, saut? The vegetables for 6 minutes then add the garlic and continue to saut? For another minute.
Pour the chicken stock into the pot, crushed tomatoes, paprika, thyme, oregano, cayenne pepper and season with salt and pepper.
Stir in the cooked sausage and the rice.
Bring the mixture to a light boil over a medium-high heat, reduce to low, cover and simmer until the rice is almost fully cooked, about 25 minutes, stir in extra chicken stock as needed.
Stir in the shrimp, cover and continue to cook until the shrimp have cooked and turned light pink, about 4 minutes.
Stir in the chicken meat, scallions and parsley, serve immediately in individual bowls.
