4 Oz Self Raising Flour
2 Oz Fine Sugar (Caster Sugar)
1 Egg
4 TBSP Milk
2 Drops Lemon Essence
Pinch of Salt
In a medium glass bowl, mix together the flour, salt and sugar, add the egg and gradually beat in enough milk to make a thick batter.
Add the lemon essence and combine with batter.
Add spoonful's of the mixture to a moderately hot, greased griddle, cooking until the underside if golden brown and the top is covered in small bubbles, roughly 3-4 minutes.
Flip and brown on the other side, remove from griddle and serve hot with butter.
