2 TBSP Butter (Unsalted)
1 Cup Raisins
2 TBSP Mixed Fruit Peel (Chopped)
3/4 Cup Dark Brown Sugar
1 TSP Mixed Spice
1 Package Puff Pastry
1 Egg White (Beaten)
1/4 Cup Sugar
Preheat oven to 425 degrees, sprinkle a baking sheet with a little water.
In a small pan, over medium heat, melt butter and stir in raisins, mixed peel, brown sugar and mix spice.
Stir until well combined and sugar has melted.
Remove from heat.
On a lightly floured surface roll out puff pastry to roughly 1/4" thickness.
Cut about 8 4-5-inch circles.
Divide the raisin mixture evenly between the circles.
Moisten edges of puff pastry, pull edges together towards the center and pinch to seal.
Flip the cakes over and lightly roll them out to make them wider.
Brush each of the Eccles cakes with egg white and sprinkle generously with sugar.
Make 3 small slices across the top of each, then place them onto the prepared baking sheet.
Bake in preheated oven for roughly 14 minutes or until they are golden brown.
