1/2 Red Bell Pepper (Chopped)
1/2 Green Bell Pepper (Chopped)
1/2 Red Onion (Chopped)
1/2 TSP Olive Oil
1/4 TSP Salt
1/4 TSP Ground Black Pepper
1/2 TSP Ground Cumin
1/2 TSP Paprika
1/4 TSP Garlic Powder
1/4 TSP Onion Powder
3 Avocados (Pitted, Peeled and Chopped)
1 Lime (Zested and Juiced)
1 Clove of Garlic (Minced)
1/3 Cup Queso Fresco Cheese (Crumbled)
In a large non-stick skillet over medium heat, add the olive oil, bell peppers and onion along with the spices and cook for 10-12 minutes, stirring occasionally.
Remove from the heat and allow to cool.
In a medium glass bowl, add the avocado, lime juice and zest and mash using the back of a fork until almost smooth.
Add the onion and bell pepper mixture, minced garlic, queso fresco and season with salt and pepper, stir gently to combine.
Transfer to a container with an air-tight lid and place in the refrigerator for 1 hour or until ready to serve.
