1 1/2 Cups Walnuts (Soaked Overnight)
9 Brazil Nuts
1 Shallot (Finely Chopped)
2 Scallions (Roughly Chopped)
Pinch of Salt
3 TBSP Sesame Seeds
Pinch of Cayenne Pepper
1 Cucumber (Chopped)
1/4 Cup Olive Oil
1 Lime (Juiced and Zested)
1/4 Hemp Seeds
1 TBSP Fresh Basil (Chopped)
4 Leaves Romaine Lettuce
Place the walnuts, Brazil nuts, shallot, scallion, salt, 2 TBSP sesame seeds and cayenne pepper into the bowl of a food processor and blend until a crumbly (yet sticky) mixture is reached that will hold together when pinched.
Roll mixture into 1/2" to 1" balls, roll in remaining sesame seeds and set aside.
In a clean food processor bowl, combine the remaining ingredients (except romaine lettuce leaves) and blend until a smooth, creamy sauce has developed, taste for seasoning and adjust as needed.
To serve, place a TBSP of the tzatziki sauce on a lettuce leaf, add two balls of falafel and garnish with a sprinkle of chopped fresh basil, best enjoyed chilled.
