1/2 Cup Feta Cheese (Crumbled)
1/2 Cup Roasted Red Bell Pepper (Chopped)
1/2 Fresh Baby Spinach Leaves
1/4 Cup Kalamata Olives (Pitted and Quartered)
1 TBSP Fresh Basil (Chopped)
1 TBSP Flat Leaf Parsley (Chopped)
2 Cloves Garlic (Minced)
4 Chicken Breasts (Boneless, Skinless)
1/4 TSP Salt
1/2 TSP Ground Black Pepper
1 TBSP Olive Oil
1 TBSP Lemon Juice
Preheat oven to 400 degrees.
Combine the feta cheese, roasted red pepper, spinach, olives, basil, parsley and garlic in a medium glass bowl.
Using a small knife, cut a horizontal slit through the thickest part of the chicken breast to form a pocket.
Stuff each breast pocket with 1/3 cup of the feta mixture, using wooden toothpicks that have been soaked in water, secure the pockets shut.
Season chicken breasts evenly with salt and pepper.
In a large oven safe skillet, heat the olive oil over a medium-high heat.
Arrange the stuffed chicken breasts, top side down in the pan and cook until golden in color, roughly 2-3 minutes.
Carefully flip the chicken and transfer the pan to the preheated oven.
Bake until an instant thermometer placed into the thickest part of the chicken breast reads 165 degrees.
Remove chicken breasts from oven, drizzle with fresh lemon juice and remove wooden toothpicks prior to serving with rice, orzo salad or side of your choice.
