Fish & Chips Recipe.


Ingredients:


For the Fish
1/4 Cup All Purpose Flour
1/4 Cup Cornstarch
1 TSP Baking Powder
Pinch of Salt
Pinch of Ground Black Pepper
1/3 Cup Newcastle Brown Ale
1/3 Cup Sparkling Water
4 (7 Oz) Cod Fillets
For the Chips
2 LBs Yukon Gold Potatoes (Peeled)


Recipe Instructions:


In a large glass bowl, add the all-purpose flour (Save 2 TBSP), cornstarch and baking powder, add a pinch of salt and pepper.
While whisking dry ingredients in the bowl, add the beer and sparkling water and continue whisking until the mixture turns thick and smooth, place batter in refrigerator for 45 minutes.
Meanwhile, cut the potatoes into 1/4 slices, then each of the slices in to quarter inch wide chips, place into a strainer and rinse under cold running water to remove the potato starch.
Place the rinsed potato chips into a pan of cold water and bring to a gentle boil and simmer for 5 minutes.
Remove chips from the pan and drain, pat dry with paper towels and keep covered in the refrigerator.
Meanwhile, lay the fish fillets on a sheet of kitchen paper and pat dry, season with a little sea salt.
In a deep fat fryer, blanche the chips a few handfuls at a time for a couple of minutes, do not let them go brown.
Once the chips are slightly cooked, remove from the oil and drain, set aside.
Place two TBSP of flour into a shallow bowl.
Toss each fish fillet in the flour and shake off any excess.
Dip fish filet into the batter and lower into the hot oil.
Fry for about 9-10 minutes or until the batter is crisp and golden brown.
Remove fish fillets from oil and drain on kitchen towel, cover and keep warm
In the same oil, place the blanched chips and cook until crispy and golden brown, about 5-7 minutes.
Serve immediately with the hot fish and your favorite condiment
