3 Cloves Garlic (Sliced)
6 Roma Tomatoes
5 Cloves (Whole)
1 Red Onion (Sliced)
1 Cup White Vinegar
2 Ancho Chiles (Soaked)
2 Bay Leaves
1 TSP Ground Black Pepper
4 White Fish Fillets (Cut into Bite-Sized Pieces)
1 TSP Salt
1 TSP Dried Oregano
1/2 TSP Ground Cumin
Preheat oven to 180 degrees.
Blend ancho chiles with 2 cloves of garlic, 1/4 onion, 3 cloves, peppers, salt and vinegar in the jug of a blender or bowl of a food processor.
Spread the pieces of fish in a large dish with the previous chili mixture and allow to marinate for 30-45 minutes.
In a medium pan over medium-high heat, cook the tomatoes with the remaining garlic, cloves, remaining onion and the bay leaves.
add the oregano, cumin and salt to the tomato mixture and stir.
Take the marinated fish and place it on a very lightly greased baking tray.
Bake in the preheated oven for 15 minutes.
After 15 minutes, add the sauce that we previously blended and bake another 10 minutes.
Serve over rice or as tacos.
