1 LB Cod Fillet (Skin Removed)
2 Cups Milk
2 Bay Leaves
Pinch of Ground Black Pepper
6 TBSP Butter (Unsalted)
2 Parsnips (Peeled and Diced)
2 Leeks (Washed and Sliced)
3 TBSP All Purpose Flour
2/3 Cup Frozen Peas
3 Cups Mashed Potatoes
Preheat oven to 350 degrees.
In a medium saucepan, over medium heat, place the milk and bay leaves, cut the fish into pieces and add to the milk.
Bring to a gentle boil then turn down the heat to low and simmer for 5 minutes.
Remove from heat, cover and set aside.
In a large pot, melt 2 TBSP butter and saut? The parsnips and leeks for about 12 minutes over a medium heat until softened.
Strain the fish and reserve the liquid mixture, set both aside.
Add flour to the parsnips and leeks and cook, stirring a few minutes.
Slowly pour in the strained milk, stirring constantly, until smooth and thickened.
Add the fish to the pot, breaking into chunks as its added.
Season with salt and pepper.
Stir in the frozen peas.
Pour the fish pie mixture into a baking dish.
Top with the mashed potatoes by spooning them across the top of the fish pie filling.
Once covered, brush with melted butter.
Bake in the oven for 40 minutes until golden brown and bubbly, serve immediately.
