1 TBSP Olive Oil
3 Small Yellow onions (Very Thinly Sliced)
2 TBSP Balsamic Vinegar
1 TBSP Fresh Thyme (Chopped)
2 TBSP Dijon Mustard
3 Cloves of Garlic (Minced)
Pinch of Salt
Pinch of Ground Black Pepper
4 Hot Dogs
2 Cups Gruyere Cheese (Shredded)
4 Hot Dog Buns (Buttered & Toasted)
In a large saut? Pan over medium heat, heat the olive oil until shimmering, add the sliced onions and cook, stirring occasionally for about 12 minutes, until the onions are lightly browned and softened.
Add the balsamic vinegar, thyme, mustard, garlic, salt and pepper, stirring until well combined, continue cooking for another 12 minutes until onions are a deep golden brown and very soft.
In a large skillet, over a medium heat, sear the 4 hot dogs until they are nicely charred, about 2 minutes per side.
Place cooked hot dog on a tasted and buttered bun and place a thick layer of gruyere cheese over the hot dog.
Spoon the caramelized onion mixture over each of the hot dogs covering the cheese completely.
Heat your broiler and place hot dogs under the broiler in a parchment paper lined baking sheet for 2 minutes, or until the gruyere cheese has melted and is bubbly.
Serve hot.
