Fresh Sole With Spinach Recipe.


Ingredients:


2 Sole Filets
2 Cups Baby Spinach Leaves (Washed, Stems Removed)
2 Cloves of Garlic (Minced)
1 TBSP Olive Oil
1/2 TSP Butter (Melted)
Pinch of Ground Black Pepper


Recipe Instructions:


In a large non-stick skillet over medium heat, add the olive oil and heat until shimmering, once oil is hot add the spinach and saut? Until wilted, about 4 minutes, add the minced garlic and a pinch of ground black pepper, mix well and remove skillet from heat.
Spray a baking dish with a little cooking spray and place the sole filets in the baking dish.
Top each of the sole filets with 1/2 of the spinach mixture, roll the filet up and arrange them so that the seam is down in the baking dish.
Brush the sole filets with melted butter and bake in the preheated oven for 10 minutes or until fork tender.
Enjoy hot.
