Fried Mac And Cheese Recipe.


Ingredients:


4 TBSP Butter (Unsalted)
1/4 Cup All Purpose Flour
2 1/2 Cups Whole Milk
2 Cloves of Garlic
Pinch of Salt
1 1/2 Cup Cheddar Cheese (Shredded)
1 Cup Colby Cheese (Shredded)
1 LB Elbow Macaroni
1 1/3 Cup Parmesan Cheese (Grated)
1 1/2 Cup Panko Breadcrumbs
2 TBSP All Purpose Flour
Pinch of Salt
Pinch of Ground Black Pepper
3 Eggs (Beaten)


Recipe Instructions:


Heat a medium saucepan of salted water to boiling on high heat.
Add pasta and cook following the instructions on package.
Meanwhile, in a large saucepan, melt the butter over medium heat, sprinkle with flour and cook for 1 minute or until well combined stirring constantly.
Reduce heat to medium-low and while whisking, slowly add the milk to the pot.
Add in garlic and a pinch of salt.
Heat sauce to simmering on medium whisking and scraping the sides of the pan.
Simmer for 1 minute or until the sauce has thickened.
Slowly begin adding handfuls of the grated cheeses to the sauce, stirring with a wooden spoon until melted before adding the next handful, remove from heat and discard the garlic.
Once pasta is cooked, drain well and add to the pot with sauce, mixing to combine thoroughly.
Transfer to a baking dish, cover and refrigerate overnight.
In a shallow pie dish or on a plate, toss together the parmesan cheese, panko, four, salt and pepper.
In a separate bowl, whisk together the eggs.
Remove macaroni and cheese from refrigerator, uncover and scoop out about 1 TBSP of the macaroni and cheese, form into a ball in the palm of your hands.
Do this for the remaining mac and cheese, placing each ball onto a line baking tray.
Once all the macaroni and cheese has been formed into balls, dip a ball into the beaten egg, shake off any excess egg mixture, then dip into the breadcrumb mixture.
Once all balls have been breaded, place the tray in the refrigerator for 5-10 minutes while you heat about 1" of oil in a deep skillet over medium high heat.
As oil heats, line a baking sheet or serving dish with paper towel, set aside.
Once oil is heated to 350 degrees, remove the tray of mac and cheese balls from the fridge and slowly lower 3-4 into the hot oil, making sure to turn them constantly so they turn an even golden brown color, roughly 1-2 minutes per ball.
Remove cooked macaroni and cheese balls with a slotted spoon and place on the paper towel lines baking tray to drain and cool slightly, repeat with remaining balls.
Serve warm with dip of your choice and enjoy!
