2 LBS Beef Tripe
1 Cup All Purpose Flour
1/2 TSP Salt
1/2 TSP Ground Black Pepper
1/2 TSP Cayenne Pepper
In a large pan over medium high heat, place tripe and cover with water, boil until tripe is tender, about 45 minutes.
Meanwhile, mix flour, salt, pepper and cayenne in a medium glass bowl until well combined.
Once tender, remove tripe from pan and allow to cool and drain.
Cut tripe into strips or cubes and dredge in the flour mixture.
In 350-degree oil, place tripe and fry until golden brown, drain on paper towel and serve.
