6 Oz Vodka
15 lbs Plum Tomatoes
75 Cup Tomato Juice
1 Large English Cucumber
5 Cup Red Bell Pepper
25 Cup Chives
1 Small Jalapeno
5 Cup Cilantro
1 Small Garlic Clove
2 Tbsp Olive Oil
1 Lime
15 Tbsp Balsamic Vinegar
1 TSP Salt
25 TSP Pepper
Seed, skin and crush the tomatoes, passing the pulp through a fine mesh strainer until you have 3/4 Cup of juice
.
Next seed both peppers, making sure to carefully wash your hands immediately after working with the jalapeno
.
Drop all ingredients, except the vodka into a blender and blend until the vegetables look roughly chopped and combined
.
Pour your mix into a pitcher and refrigerate overnight to fully integrate flavors
.
To serve, place half a scoop of ice into the bottom of 5 pint glasses and pour in 1 1/2 Oz of vodka into each
.
Fill the remainder of the glass with your gazpacho mix and stir slowly to combine
.
Serve with a lemon wedge and fresh vegetable garnish.
