2 Eggs (Beaten)
4 Cherry Tomatoes (Halved)
1/4 Cup Red Onion (Diced)
1 TBSP Fresh Basil (Chopped)
1/2 TBSP Olive Oil
Pinch of Salt
Pinch of Ground Black Pepper
In a large non-stick skillet, over medium heat, add the diced onions and olive oil and cook until the onions begin to soften and turn translucent.
Once onions have softened, add the tomato halves, salt, pepper and chopped basil and continue to cook for another 1-2 minutes until the tomatoes begin to release their juices.
Add the beaten eggs to the skillet and cook, while continually stirring, for another 2 minutes or until eggs are cooked to required doneness.
Serve hot.
