1 Cup Fresh Ginger (Finely Chopped)
1 Cup Sugar
2 Cups Water
1 Cup Seltzer Water
Simmer the two cups of water over medium heat.
Add sugar and chopped ginger and allow to reduce until syrupy.
Strain into a glass jug and place in refrigerator to cool.
To use, add 1/2 cup of ginger syrup to a 16 oz cup filled with ice and fill with seltzer water.
Serve immediately.
