Gizzards & Rice Recipe.


Ingredients:


1 1/2 LBS Chicken Gizzards (Cut into 4 Pieces)
3 Cups Water
1 1/2 TSP Salt
1/3 Cup Vegetable Oil
1/2 Cup All Purpose Flour
2 Yellow Onions (Sliced)
1/2 TSP Ground Black Pepper
4 Cups Chicken Broth


Recipe Instructions:


In a large saucepan, place gizzards, water and 1/2 TSP of salt and bring to a boil for 30 minutes.
Drain gizzards and set aside.
In a medium skillet, add oil and heat on medium high for 3 minutes.
Slowly add the flour and blend to make a roux.
Cook for another 8 minutes until it is a medium brown color.
Add onions to roux, 1 TSP salt, black pepper and chicken broth, stir and add gizzards.
Bring pan to a rapid simmer, reduce heat to low and simmer for 15 minutes.
Serve immediately over cooked white rice.
