Gnocchi With Zucchini And Tomato Ragu Recipe.


Ingredients:


1 LB Gnocchi
1 Pint Grape Tomatoes
2 Zucchini
1 Red Onion (Roughly Chopped)
4 Cloves of Garlic
1 TBSP Fennel Seed
2 TBSP Olive Oil
1 TBSP Water
Pinch of Salt
Pinch of Fresh Ground Black Pepper
2 Scallion (Chopped)


Recipe Instructions:


Preheat oven to 420 degrees.
Slice the grape tomatoes in half lengthways.
Slice zucchini lengthways and then slice into 1/4-inch slices.
In a 10-inch cast iron skillet, add the tomatoes, zucchini, onion, fennel seeds and gnocchi.
Drizzle with 1 TBSP olive oil and add 1 TBSP water.
Season with salt and pepper, toss to combine and place in the oven for 15-20 minutes until the gnocchi have soaked up all of the juices and the zucchini and tomato halves are slightly brown.
Remove skillet from the oven and stir in the chopped scallions, adjust seasoning as required and serve while hot in bowls.
