2 Organic Eggs
1/4 Cup Goat Cheese
1 TBSP Water
1 TSP Fresh Parsley (Chopped)
1 TSP Fresh Tarragon (Chopped)
1 TSP Grapeseed Oil
Pinch of Salt
In a medium glass bow, combine the eggs and water and whisk until evenly combined.
Heat the grapeseed oil over medium heat in a medium non-stick skillet.
Pour the egg mixture into the skillet and allow to set while cooking gently for 2 minutes.
Sprinkle the herbs and goat cheese over the omelet, gently lift the edges of the omelet and fold in half, continue to cook for another 3-4 minutes until egg is set.
Serve warm.
