1 TBSP Olive Oil
1/4 Cup Red Onion (Diced)
1/2 Asparagus (Cut into 1" Pieces)
1/4 Cup Mushrooms (Chopped)
6 Large Eggs
1/4 Cup Fresh Parsley (Chopped)
2 TBSP Goat Cheese (Crumbled)
Pinch of Salt
Pinch of Ground Black Pepper
Turn broiler to high heat.
In a large cast-iron skillet heat olive oil over high heat, add the onions, asparagus and mushrooms, season with salt and pepper to taste.
Saut? Until the onions are translucent and mushrooms start to brown.
In a medium glass bowl, with the eggs with a pinch of salt and pepper, add the parsley and half of the goat cheese.
Pour the egg mixture over the vegetables in the skillet and move the mixture around the skillet gently until the eggs begin to set.
Sprinkle remaining goat cheese over the top and place in the oven under the broiler for 4 minutes until the cheese begins to brown.
Serve hot.
