Greek Bruschetta Recipe.


Ingredients:


8 Slices Italian Bread (Toasted)
3 Cups Cherry Tomatoes (Diced)
1 Cup Cucumber (Diced)
1/2 Cup Red Onion (Diced)
3 Cloves of Garlic (Minced)
2 TBSP Fresh Oregano (Chopped Lightly)
1 TBSP Fresh Mint (Chopped Lightly)
1/4 Cup Olive Oil
1 TBSP Lemon Juice
2 TBSP Red Wine Vinegar
1/2 TSP Salt
1/2 TSP Ground Black Pepper
1/2 Cup Hummus
1/2 Cup Feta Cheese (Crumbled)


Recipe Instructions:


In a medium glass bowl, add the tomato, cucumber, onion, garlic, oregano, mint, olive oil, lemon juice, red wine vinegar, salt and pepper and mix gently to combine.
Spread the toasted Italian bread with hummus, top with the Greek cucumber and tomato mixture, sprinkle with a little feta cheese and enjoy immediately.
