5 1/2 LBs Chicken Leg Quarters
6 Cloves of Garlic (Minced)
3 Limes (Zested)
1/4 Cup Lime Juice
1/3 Cup Orange Juice
1 TBSP Orange Zest
1 TSP Ground Cumin
1 Bunch Fresh Cilantro (Chopped)
1/4 Cup Fresh Oregano (Finely Chopped)
1 TSP Black Pepper
1/3 Cup Olive Oil
Pinch of Salt
Place chicken legs into a large glass bowl and season chicken legs with salt and pepper and set aside.
In the bowl of a food processor, combine remaining ingredients and process until smooth to make a chicken marinade.
Place 1/2 cup of the marinade in a bowl and set aside.
Pour remaining marinade over the seasoned chicken leg quarters and toss to coat evenly, place covered chicken legs into refrigerator for 6 hours (or overnight) to marinade.
Preheat grill to 375 degrees.
Wrap each chicken leg in a sheet of aluminum foil and poke a single hole on the top of each wrap.
Place chicken leg quarters on the grill (turning occasionally) for 1 1/2 to 2 hours or until they have an internal temperature of 165 degrees.
Remove aluminum foil from the chicken and cook unwrapped on the grill for 5 minutes until seared.
Serve on a platter with remaining marinade.
