4 Slices Potato Bread
4 Rings of Pineapple
6 Slices Canadian Bacon
1/4 Cup Monterrey Jack Cheese (Shredded)
2 TBSP Butter (Softened)
1 TSP Fresh Oregano (Finely Chopped)
1 TSP Fresh Parsley (Finely Chopped)
Butter one side of each slice of bread, sprinkle the fresh herbs over the buttered side of each slice.
Buttered side down, sprinkle two slices of bread with half of the shredded cheese, add 3 slices of Canadian bacon to each slice, 2 pineapple rings and top with remaining shredded cheese.
Add the two slices of bread to the top, buttered side up.
Grill in a skillet or on a griddle over a medium heat until the bread turns golden brown, about 3 minutes per side.
Remove from the heat, slice in half and serve warm.
