2 Eggs
1/4 Avocado (Pitted, Peeled and Sliced)
1 TSP Milk
2 TSP Olive Oil
1 Cup Kale (Stems Removed and Chopped)
1 TBSP Lime Juice
1 TBSP Italian Seasoning
1 TSP Hemp Seeds
1/2 TSP Crushed Red Pepper Flakes
In a large glass bowl, add all ingredients except for the milk, oil and eggs and toss to combine.
Set aside.
In a small glass bowl, beat the milk and eggs together with a fork.
In a medium nonstick skillet, over medium heat, add the olive oil and heat until shimmering.
Pour the egg mixture into the skillet and cook until the egg mix begins to firm, about 3 minutes.
Flip the omelet over and continue to cook for another 2 minutes.
Plate omelet and top with the kale salad mixture, serve immediately.
