Homemade Vegan Pasta Recipe.


Ingredients:


1 1/4 Cup All Purpose Flour
1 Cup Semolina Flour
1/2 TSP Salt
3/4 Cup Water
2 TSP Olive Oil


Recipe Instructions:


In a medium glass bowl, mix the flour, semolina and salt, create a well in the center and pour in the water and olive oil, mix together until well combined.
Transfer dough to a working surface and knead for 5-10 minutes until the dough is smooth and elastic.
If dough is too dry add a little more water, if too sticky, add a little more flour.
Form dough into a ball and wrap in cling wrap and allow to chill in the refrigerator for 1-2 hours.
After chilling, cut pasta into 2 equal portions, place one portion onto a floured surface and roll out using a rolling pin or pasta machine.
Dust with more flour and roll up into a log, using a sharp kitchen knife cut the log into strips, unfurl the noodles and lay them out to dry for about 20 minutes on a parchment lined baking sheet.
Bring a large pot of salted water to a boil, add pasta and cook for 3-4 minutes until tender.
Drain pasta and serve with your favorite sauce or pesto.
