2 1/2 Cups All Purpose Flour
1/2 Cup Bread Flour
3/4 TSP Salt
1/3 Cup Water
1/2 Cup Butter (Unsalted)
1/2 Cup Lard
In a large glass bowl, whisk together the all purpose flour, bread flour and salt, set aside.
In a medium pan, over medium heat, bring the water to a rolling boil, add the butter and lard and stir until melted into the water.
Make a well in the center of the flour and carefully pour the hot liquid into the center, begin to mix the flour and water mixture with a fork until the dough forms a shaggy mix, it should be able to form a ball but not be smooth.
Remove the dough from the bowl and on a very lightly floured surface, knead for 2-3 minutes until smooth.
