1 Whole Grain Tortilla Wrap
1/3 Cup Hummus
1/4 Cup Spinach (Chopped)
2 TBSP Sun-Dried Tomatoes (Chopped)
4 Kalamata Olives (Sliced)
1 TSP Olive Oil
In a medium skillet over medium heat, add the olive oil, spinach and sun-dried tomatoes and cook until spinach has wilted.
Add the kalamata olives to spinach and stir to combine.
Remove the spinach mixture from the heat, set aside.
Place tortilla wrap on a work surface and spread with the hummus.
Place the spinach mixture on one half of the tortilla wrap and fold the wrap to create a half-moon.
Warn a medium skillet over medium heat, brush with a little olive oil and place the quesadilla into the pan and cook until the bottom begins to turn golden brown, flip and continue cooking until second side turns golden brown.
Remove quesadilla from skillet, cut into thirds and eat immediately while warm.
