2 LBs Potatoes (Washed and Cut into Large Chunks)
2 Cloves Garlic (Peeled)
4 TBSP Butter (Cubed)
1 TBSP Olive Oil
1 Leek (Sliced Thinly)
1/2 Head Cabbage (Sliced Thinly)
3 Scallions (Sliced Thinly)
Pinch of Salt
In a medium pot over high heat, place the cubed potatoes and garlic, cover with water by about an inch and add 1 TBSP of salt, bring to the boil until the potatoes are tender, about 15 minutes.
Drain and set aside.
While the potatoes are cooking, heat the olive oil in a medium pot, add the leeks and cabbage and cook until wilted and the liquid has mostly been absorbed, about 5-6 minutes.
Place the drained potatoes into the pot with the leek and cabbage mixture, add the cubed butter and chopped spring onions.
Mash the potato mixture until smooth and creamy, add salt to taste and serve hot.
