Irish Whiskey Glazed Salmon Recipe.


Ingredients:


For the Whiskey Glaze

1 1/4 Cup Fine Granulated Sugar
1/3 Cup Cold Water
1/3 Cup Hot Water
3 TBSP Irish Whiskey

For the Salmon

2 LBs Salmon Fillet
1 TBSP Olive Oil
Pinch of Salt
Pinch of Ground Black Pepper


Recipe Instructions:


Preheat the oven to 400 degrees and brush a baking dish with a little oil, set aside.
In a cold pan, add the sugar and cold water, stir over a low heat until the sugar has completely dissolved.
Increase the heat to medium and bring to a boil without stirring.
Continue to boil until the color changes to a golden brown and it begins to resemble caramel.
Remove caramel mixture from the heat and very slowly begin to add the hot water.
Allow the bubbles to stop and add the Irish whiskey.
Once the Irish whiskey has been added, place back on the heat and bring the mixture to a boil for 1-2 minutes.
Stir and remove from heat, transfer to a glass bottle.
Pat the salmon fillet dry, remove any small bones and place into the baking dish skin side down.
Brush with olive oil and season with salt and pepper.
Bake the salmon in the preheated oven for 10 minutes and remove.
Brush with the Irish whiskey glaze and return to the oven for about 5-6 minutes until cooked through and the temperature reaches 145 degrees.
Remove from the oven and brush with more of the Irish whiskey glaze and serve warm.
