4 Avocados (Halved)
1/4 Cup Chickpeas (Rinsed and Drained)
1/4 Cup Vegan Mayonnaise
1 Stalk Celery (Diced)
2 TBSP Red Onion (Diced)
1 TBSP Chopped Fresh Parsley
1/2 TSP Dijon Mustard
Salt & Pepper to Taste
Add the chickpeas, mayonnaise, diced celery, red onion, herbs, mustard, salt and pepper to a bowl and mix until well combined.
Place a few TBSPs of the tuna salad in each avocado half.
Serve cold or slightly warmed under a broiler for 5 minutes.
