1 TBSP Olive Oil
1 TBSP Fresh Basil (Chopped)
3 Eggs
1 TBSP Parmesan Cheese (Grated)
Pinch of Salt
Pinch of Ground Black Pepper
In a medium skillet over medium heat, heat the olive oil until it begins to shimmer.
In a medium glass bowl, beat the eggs with the basil, salt, pepper and grated parmesan cheese, add eggs to the hot oil and scramble them quickly nut gently.
When eggs are cooked to desired consistency, remove skillet from heat, transfer eggs to a plate, sprinkle with a little more chopped basil and serve hot.
