1 Can Albacore Tuna (Drained)
1/2 Red Bell Pepper (Diced)
1/2 Carrot (Peeled and Diced)
1/4 Cup Cherry Tomatoes (Diced)
1 Scallion (Thinly Sliced)
1/2 Large Avocado (Mashed)
1 Lime (Juiced)
In a medium glass bowl, mix together the tuna, all the diced vegetables, mashed avocado, lime juice, sliced scallions, salt and pepper until well combined.
Chill in refrigerator for 30 minutes.
Serve alone or over a salad or in a wrap.
