Jackfruit Pulled Pork Recipe.


Ingredients:


2 (14 Oz) Cans Green Jackfruit (Drained)
1 TBSP Olive Oil
1/2 Yellow Onion (Chopped)
1/2 TSP Chili Powder
1/2 TSP Paprika
1/4 Cup Tomato Paste
1/4 Cup Apple Cider Vinegar
1/4 Cup Brown Sugar
1 TSP Spicy Brown Mustard
1/4 TSP Salt
1/4 TSP Ground Black Pepper


Recipe Instructions:


In a strainer, rinse jackfruit and shred the fruit to resemble strands of shredded meat.
Rinse again and set aside.
In a large skillet over medium-high heat, saut? The onion until it begins to soften then add in the chili, paprika, mix well and saut? Again for 60 seconds.
Add in tomato paste, vinegar, brown sugar, mustard, salt and pepper and stir well to melt the brown sugar.
If mixture starts to dry out, add a few TBSP of water to moisten it.
Add in the jackfruit and coat with sauce mixture.
Heat for 5 minutes and once heated through, serve immediately or store in the refrigerator for 5 days in an airtight container.
