4 Slices Bread
4 Oz Cream Cheese (Softened)
4 Slices Bacon (Cooked)
2 Jalapeno Peppers
2 TBSP Apricot Preserve
2 TBSP Butter (Softened)
On a baking sheet add the jalapeno poppers and grill in the oven for 5 minutes until the skins blacken and begin to blister.
Once blackened, remove from the oven and place into a sealed jar and allow to steam for 10 minutes.
Remove the skins and coarsely chop, set aside.
Spread the cream cheese on two slices of bream, top with the chopped jalapeno and add two slices of bacon to each piece of bread.
On the remaining two slices, spread the apricot preserve evenly and place on top of the first slices of bread preserve side down.
Butter both sides of the sandwich and grill in a skillet or on a griddle over a medium heat until the bread turns golden brown, about 3 minutes per side.
Remove from the heat, slice in half on the diagonal and serve warm.
