Jam Roly Poly Recipe.


Ingredients:


3 Medium Eggs
1/2 Cup Caster Sugar (Fine Baking Sugar)
1/2 Cup Self Raising Flour
1 TSP Vanilla Extract
1/2 Cup Strawberry Preserve


Recipe Instructions:


Preheat oven to 200 degrees and line a baking sheet with lightly oiled parchment paper.
Whisk together the eggs and sugar in a medium glass bowl until pale yellow in color gently sift the flour into the egg and sugar mixture, ass 1 TBSP of water and fold it into the batter.
Pour the batter into the parchment lined baking sheet and place in the oven for 12 minutes or until golden brown and firm to the touch.
Place a sheet of parchment paper that is large than your baking sheet on the counter and dust with a little caster sugar.
Turn the sponge out onto the parchment paper then, peel off the parchment on the bottom of the sponge, set aside to cool slightly.
To assemble, spread the strawberry preserve over the sponge cake, leaving roughly 1/2-inch gap at either edge and a 1-inch gap at one of the ends.
Using the parchment paper, gently roll the sponge up and around itself, carefully trim each end of the roll and serve immediately.
