Jeweled Israeli Couscous Recipe.


Ingredients:


3 TBSP Olive Oil
2/3 Cup Israeli Couscous
1/4 Shallot (Finely Chopped)
1 1/3 Cup Chicken Stock
3/4 TSP Salt
2 TBSP Golden Raisins
2 TBSP Fresh Mint (Finely Chopped)
1/4 Cup Pomegranate Arils
3 TBSP Toasted Pistachios (Coarsely Chopped)
1 Lemon (Zested and Juiced)


Recipe Instructions:


In a medium pan heat 2 TBSP of olive oil over a medium heat until shimmering, add the shallot and couscous and cook for 4-5 minutes until the couscous is lightly toasted and the shallot is tender.
Add the chicken broth and salt and stir to combine.
Bring mixture to boil, cover and reduce the heat to lose and simmer for 10-12 minutes until the liquid is absorbed.
Remove the pot from the heat, stir in the golden raisins, cover and let stand for 5-10 minutes.
Transfer the couscous to a serving bowl and allow to cool for 10 minutes.
Once cooled, stir in the mint, pomegranate arils, pistachios, lemon zest and juice and mix well, finally, stir in the remaining TBSP of oil and stir to combine.
