1 Lemon (Juiced)
1 Garlic Clove (Minced)
1 TBSP Tahini
1 TBSP Olive Oil
2 Cups Kale
2 Cups Arugula
Place the lemon juice, garlic, tahini and 1 TBSP of cold water into a small bowl.
Mix well to create a simple dressing, season with salt and pepper to taste.
In a large non-stick skillet, heat the olive oil over a medium heat, add the kale and arugula and cook for 3-4 minutes.
Add 1/2 of the dressing to the skillet and continue to cook for another 1 minute.
Transfer the kale and arugula to a serving plate and drizzle with remaining dressing.
