1/4 Cup Brown Sugar
1/4 Cup Reduced Sodium Soy Sauce
2 TSP Sesame Oil
1/2 TSP Crushed Red Pepper Flakes
1/4 TSP Ground Ginger
1 TBSP Olive Oil
3 Cloves Garlic (Minced)
1 Block Firm Tofu (Crumbled)
2 Scallions (Thinly Sliced)
1/4 TSP Sesame Seeds
1 Cup Brown Rice
Cook the rice according to package instructions.
In a small glass bowl whisk together the brown sugar, reduced sodium soy sauce, red pepper flakes, sesame oil and ginger.
In a large non-stick skillet over medium-high heat add the garlic and cook for 1 minute until fragrant, stirring constantly.
Add the crumbled tofu and continue to cook until the tofu has browned, about 4-5 minutes.
Stir the soy sauce mixture and green onions into the crumbled tofu and allow to simmer for 4 minutes.
Once cooked, remove the brown rice from the heat and place in the bottom of a bowl, top with the Korean tofu mixture and sprinkle with a little more sliced scallion and sesame seeds, serve hot.
