1 LB Raw Prawn (Deveined and Diced)
1 Small Cucumber (Diced)
1 Small Red Onion (Diced)
1/4 Fresh Pineapple (Diced)
1 Serrano Chili (Finely Diced)
2 Lemons (Juiced)
2 Limes (Juiced)
2 Oranges (Juiced)
1 Avocado (Diced)
1/4 Cup Cilantro (Roughly Chopped)
Pinch of Salt
Pinch of Ground Black Pepper
In a large glass bowl, combine the diced prawn, cucumber, onion, pineapple, chili, lemon juice, orange juice and lime juice and stir until mixed and combined.
Transfer the bowl to the refrigerator and let the citrus cook the prawn for about 30 minutes.
Remove bowl from fridge and stir in the avocado and cilantro, season with salt and pepper and serve on its own, with tortilla chips or on a toasted slice of Italian bread.
