4 Cups Cauliflower Rice
2 TBSP Olive Oil
1 TSP Salt
1 TSP Ground Black Pepper
3 Cloves Garlic (Minced)
1 Lemon (Zested & Juiced)
1/3 Cup Fresh Parsley (Finely Chopped)
2 TBSP Pine Nuts (Toasted)
In a large skillet over medium-high heat, add 1 TBSP olive oil and heat until shimmering, add in the minced garlic and pinenuts and cook until the garlic releases its aromas.
Next, add in the cauliflower rice, lemon juice, lemon zest, salt and ground black pepper and cook for 8 minutes or until the cauliflower rice starts to get tender.
Remove the skillet from the heat, stir in the parsley and pinenuts, adjust seasonings and serve hot.
