1 LB Pasta (Cooked)
1 English Cucumber (Sliced)
1 (15 Oz) Can of Cannellini Beans
1 Red Bell Pepper (Diced)
1 Red Onion (Diced)
2 Cloves Garlic (Minced)
1 Lemon (Juiced)
3 TBSP Olive Oil
1/2 Cup Fresh Cilantro (Chopped)
Pinch of Salt
Pinch of Ground Black Pepper
In a small glass bowl, whisk together the lemon juice, garlic, olive oil and cilantro, set aside.
In a large glass bowl, combine the pasta, vegetables and a pinch of salt and pepper and mix well to combine.
Drizzle with the lemon and garlic dressing, chill for 30 minutes and serve.
