1 Cup Butter (Softened)
2/3 Cup Sugar
1 Egg
2 TSP Lemon Zest
1 TBSP Lemon Juice
2 1/2 Cups All Purpose Flour
Preheat oven to 350 degrees, line a baking sheet with parchment paper set aside.
In a large glass bowl, cream together the sugar and butter until smooth and creamy.
Add in the egg, lemon juice and lemon zest beating into the butter and sugar mixture evenly.
Add in the flour gradually, beating to combine in batches until fully incorporated into the cookie dough.
Drop TSPs of the cookie dough onto the parchment lined baking sheet, leaving about 1-2" between each drop of dough to allow the cookies to expand as they cook.
Place cookies into the preheated oven for 12-15 minutes.
Remove from oven and allow to cool.
