6 Oz Medium Peeled and Deveined Prawn
1 TBSP Fresh Lemon Juice
2 TSP Olive Oil
1 TSP Minced Garlic
3/4 Cup Arugula
3/4 Cup Baby Spinach
2/3 Cup Sweetcorn
1/3 Cup Cherry Tomatoes (Halved)
In a small glass bowl, toss the prawn, lemon juice, garlic and olive oil.
Heat a large non-stick skillet over medium high heat, add the prawn mixture and cook for 4-5 minutes stirring occasionally until the prawn are cooked and opaque.
In a medium glass bowl, toss the arugula, spinach, corn and tomatoes until well mixed, place prawn on top and drizzle with the juices from the skillet.
Serve warm.
