2 Cups Fresh Lima Beans (Shelled)
1/2 TSP Ground Coriander
1 1/2 TSP Ground Cumin
1/2 TSP Garlic Powder
1/2 TSP Dried Oregano
1/2 TSP Ground Black Pepper
1/2 TSP Ground Achiote
1 Cup Fresh Cilantro (Chopped)
3 TBSP Fresh Lime Juice
2 TBSP Olive Oil
1 Pinch Crushed Red Pepper Flakes
Bring a medium pan of salted water to a rolling boil and add the lima beans, ground coriander, ground cumin, garlic powder, dried oregano, ground black pepper and ground achiote, stir and then reduce heat to a simmer for 9 minutes.
Remove pan from the heat and let content cool for a few minutes before draining and adding to the bowl of a food processor.
Add the olive oil and cilantro the bowl of the food processor and blend for 30-45 seconds.
Next, add the lime juice, salt and red pepper flakes and blend until smooth, but not pureed.
Transfer the dip to a serving bowl, cover and refrigerate for 45 minutes or until ready to serve.
