2 (12 Oz) Bags Frozen Cauliflower & Broccoli Mix
1 Onion (Diced)
4 Slices of Bacon
2/3 Cup Sour Cream
8 Oz Cream Cheese (Softened)
1/2 TSP Garlic Powder
Pinch of salt
1/2 TSP Ground Black Pepper
2 Cups Sharp Cheddar (Shredded)
1 Scallion (Sliced)
Preheat oven to 350 degrees and spray a 8x8 baking dish with coconut cooking spray, set aside.
In a large non-stick skillet over medium-high heat, cook the bacon until slightly crispy, remove to a plate lined with paper towels to drain and cool.
In the same skillet, add the diced onion and cook until translucent, once cooked, remove from the skillet and drain on paper towels.
Cook the frozen cauliflower and broccoli mix according to package directions and drain.
In a large glass bowl, combine the cream cheese, sour cream, 1 cup of the cheddar cheese, garlic powder, salt and black pepper until evenly mixed.
Add the cooked vegetables to the cream cheese mixture and mix to combine, once mixed well, spread the mixture in the prepared baking dish and sprinkle with the remaining cheddar cheese.
Bake in the preheated oven for 30 minutes or until the cheddar cheese is golden brown and bubbly.
Remove from the oven.
Chop the cooked bacon and sprinkle over the top of the vegetable mixture along with the sliced scallion, enjoy warm.
