1 Lobster (Cooked, Shelled, Sliced or Chopped)
Pinch of Salt
1 Small Shallot (Minced)
2 TBSP Fresh Cilantro (Chopped Finely)
1 Jalapeno Pepper (Minced)
2 TBSP Fresh Lime Juice
1 TBSP Olive Oil
Add sliced or chopped lobster to a medium glass bowl, add shallots, cilantro, jalapeno and lime juice, toss to combine.
Season with salt and place bowl in refrigerator for 1 hour.
After 1 hour, plate ceviche and drizzle with a little olive oil.
Serve immediately.
