Mac & Cheese Jalapeno Poppers Recipe.


Ingredients:


6 Large Jalapeno Chilis
1 1/2 Cup Uncooked Elbow Macaroni
1 TBSP Butter (Unsalted)
1 TBSP All Purpose Flour
1 1/2 Cups Whole Milk
Pinch of Salt
Pinch of Ground Black Pepper
3 Cups White Cheddar Cheese (Grated and Divided)
3 Green Onions (Finely Sliced)


Recipe Instructions:


Preheat the oven to 350 degrees and line a baking tray with parchment paper, set aside.
Slice the jalapenos in half lengthwise and using a small TSP, scoop out the seeds and ribs.
Set each half on the prepared baking tray.
As directed, cook the pasta according to package, drain and set aside.
As pasta is cooking, in a large pan over medium heat, melt the butter and add the flour, whisk mixture for two minutes until smooth and lump free.
Slowly drizzle milk into the butter and flour mixture, whisking constantly to get rid of any lumps.
Continue to heat for 4-5 minutes until mixture begins to thicken.
Add 2 cups of the grated cheddar cheese and whisk until it has melted into the milk mixture.
Add drained pasta and fold through the sauce, seasoning with salt and pepper.
Using a TBSP, fill the hollowed out jalapeno pepper halves with the macaroni cheese mixture and place back on the baking tray.
Top each jalapeno half with a little of the remaining shredded cheese and bake in the oven for 15-20 minutes until the cheese has melted and begins to turn golden brown.
