3 TBSP Butter (Unsalted)
3 TBSP All Purpose Flour
2 Cups Whole Milk
4 Cups Cheddar Cheese (Shredded & Divided)
1 LB Elbow Macaroni (Uncooked)
8 Slices Cheddar Cheese
8 Flour Tortillas
1/4 Cup Green Onion (Sliced)
Preheat oven to 350 degrees.
Cook elbow macaroni as directed on the package.
In a large skillet over medium heat, melt the butter and add the flour, whisk until smooth.
Add in 2 cups of milk slowly while continually whisking and continue to cook until mixture begins to thicken.
Next, add 3 cups of the shredded cheddar cheese to the mixture and stir until cheese has melted.
Combine cooked macaroni to the cheese sauce mixture and stir to combine well.
Pour mixture into a greased casserole dish and top with the remaining shredded cheese, place into the oven for 25-30 minutes.
Take a flour tortilla and place it in a pan over medium high heat add a slice of cheddar cheese and a heaped spoonful of the cooked macaroni and cheese and a sprinkle of chopped green onions, place a second tortilla on to and brown on both sides until crispy and the cheese has melted, repeat for remaining ingredients.
Serve warm.
